Stefano will cover the following subjects:
* Kitchen workflow - learn how to set up your preparation and cooking areas in a way that will make working there efficient
* Menu costing - learn to accurately work out the cost of your menu items, and to price them accordingly
* The base - start your pizza making by learning how to work skillfully and intuitively with the dough to turn it into a prime pizza base -
dough can be supplied to you moving forward
* The pizza - learn to create an authentic Italian pizza using the best ingredients, and how to bake it to perfection
* Presentation - how to serve up a meal that looks as good as it tastes
* Front of house - reception and service to see your patrons leave with smiles - having good customer service is just as important as serving great food
How the course works:
Instead of a traditionally formal structured course with classes and lessons, what he offers is a hands-on and observational learning experience. Stefano will accompany you on a daily basis at your establishment, instructing you how best to manage every aspect of your restaurant.
For ZAR 5 000.00 per day (plus accommodation if you're outside of Gqeberha), Stefano will come to your restaurant and help you turn it into an authentic pizzeria.
He offers practical tips that will make all of your processes run more smoothly, and the valuable lessons he learnt experientially over decades.
